25 May Helena Bay Pesto

As you know I was on a mission to get sauerkraut into my kiddies bellies which is how this pesto was created. My little ones just loved this pesto using the Helena Bay kraut and they had no idea that kraut was actually in it. Hope you enjoy this fresh and yummy pesto a much as we do:)
- 2 cups Fresh Herbs (We like baby spinach and parsley)
- 1/4 cup of Olive Oil
- 1/2 cup Helena Bay Kraut
- 1/4 cup Cashew Nuts (optional)
- Salt to taste
- Combine herbs and nuts in a food processor and pulse until coarsely chopped.
- Add olive oil, process, and then add kraut and process a little more.
- Season to taste. Enjoy!
