Lemon Krautdiliumtious Balls
- 1 cup almonds (activated if possible)
- 1 cup cashews (activated if possible)
- 1/2 cup coconut
- 10 or more dates (medjool the nicest)
- Juice and zest of 1 or 2 lemons
- 1/2 cup Just Kraut
- In a food processor fitted with the S blade, blend the nuts into a fine meal.
- Add the dates, coconut and lemon juice/zest; pulse until combined.
- Add in the sauerkraut and pulse just a little more.
- Roll into balls and refrigerate.
